Really Easy Peanut Butter Cookies

Most baking blogs start with a sweet story or mildly amusing anecdote. You scroll for pages to get to the recipe. Not this one! Just know that, as a kid, I made peanut butter cookies with my mom. It’s a nice memory – you can fill in the blanks!

Let’s get to the point. This recipe is quick, easy, and yummy.

Want to be a bit fancy? Cut up several peanut butter cups and fold them to the dough just before rolling into balls, then press down with your thumb.

  • 1.5 cups all purpose flour
  • 1 cup packed dark brown sugar
  • 3/4 cup peanut butter (I used Jif)
  • 1/2 cup butter, softened but still cool
  • 1 egg
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt

Preheat oven to 375°.

Mix butter and sugar with an electric mixer on medium speed until lightened and well blended. Add egg and vanilla, mix well. Add peanut butter, mix until thoroughly combined.

Sift the flour, baking soda, salt. Mix into the peanut butter dough in 2 to 3 increments, mixing at low speed until all the flour is incorporated.

Using a cookie scoop or spoon, place rounded 1″ to 1 ½” balls of dough on a parchment-lined baking sheet about 2 inches apart. Using a fork, press cookies down in a crisscross pattern until cookies are 1/2 inch thick.

Bake at 375° for 7 to 8 minutes, until cookies just start to brown around the edge. Cool on wire rack.

Tip: To make measuring easier, spray your measuring cup with non-stick spray before scooping in the peanut butter.
