New Year’s Resolutions & Maple Cream Cheese Frosting

I’m currently 19 days into my “no sugary snacks for the month of January” promise to myself.

I’ve baked once and had one bite of the result…

An apple cake with maple spice frosting. It was pretty tasty (thanks again, The Cake Book.

Here’s the maple frosting I highly recommend on any apple, vanilla, spice cake, maybe pancakes, waffles… Ok, obviously, I’m just dreaming about sugar.

The “From Memory” Maple Cream Cheese Frosting

¼ cup butter – softened

¼ cup cream cheese – softened

1 ½ cups confectioners sugar (more to taste or thicken)

1 teaspoon vanilla extract

¼ teaspoon maple extract

⅛ teaspoon cinnamon

⅛ teaspoon nutmeg

Mix butter & cream cheese with electric mixer until smooth. Add extracts and spices, then add the confectioners sugar in multiple (3 – 4) scoops, beating on medium speed until smooth between each addition.

The million dollar question: what should be the first thing I bake and eat come February 1?

Let the record show I haven’t even had real chocolate for 19 days. So whatever the winning recipe is, it will have chocolate.

As for my New Year’s Resolution…I bought some monkfruit sweetener. I’ll let you know if it’s blog worthy!
