US Women’s Patriotic World Cup-cakes!

Celebrate any United States victory with these super easy,  super quick mini cupcakes. If you don’t have a mini muffin pan, these can also be made as regular cupcakes.

Strat by picking your go-to boxed white cake mix, and prep the batter according to box directions.

Prior to scooping into the prepared muffin tin, gently mix in the red, white and blue sprinkles to the batter. A couple of tablespoons of sprinkles is all you need to get the effect. Use the big kind of the sprinkles, not decor sugar. I used Betty Crocker’s sprinkles, but pick your favorite.

Divide into lined mini muffin pans (a cookie scoop works perfect).

Bake according to package directions – note mini muffins don’t take nearly as long as traditional cupcakes, so keep an eye on the oven. After taking them out of the oven,  make the super quick patriotic glaze:

  • 1 cup powdered sugar
  • 2 tablespoons milk, more as needed to thin.
  • 1/2 teaspoon vanilla
  • Red,  white,  and blue sprinkles

Mix the first 3 ingredients until smooth.  Glaze should be thick enough to hold the sprinkles,  but thin enough to pour on with a spoon.  Stir in the sprinkles,  the color (surprisingly)  doesn’t bleed. Add to cupcakes while they’re still warm for a true glazed effect. 

These took about 30 minutes from start to finish!
